Perfect Pig Roaster!!
Perfect for our crazy casa!! We roasted a whole pig, perniles, whole chickens and we are going to try the turkey in the caja china this thanksgiving. This box gets very hot and cooks evenly as long as you have the heat distributed evenly. I suggest people checking out YouTube videos on how to use this, that’s what we did. We love this thing! The pork came out so tender and juicy!

Probably the worst way to cook a pig
My family has always cooked their pigs in the ground. After moving to a new location where we couldnt decide where to make a dedicated pit we decided to buy one of these horrendous contraptions.Assembly: Be sure to wear some thick gloves. Every single edge of metal is razor sharp and ready to cut you to pieces. Nothing is sanded or deburred. The wood is untreated. Look at it wrong and you get splinters. The plywood bottom was completely warped and paper thin. Many of the pieces are hard to line up and I'm sure they have poor QC control. All the trays leak. Fat and blood form little icicles as the cool and congeal dripping.I will give credit and say they did a good job packing it. Nothing was broken. As a lot of other revews pointed out they didnt include the marinade injector. Im sure it would have been garbage grade anyway.Cooking: We do the traditional Cuban seasonings on the pig. Cooking in this device does preserve the juiciness of the meat but at the expense of flavor. The meat doesnt get the smokiness of the charcoal or hickory because the pig never comes in contact with it. You know this before you buy it, its a given. You lose a lot of the flavor. Just comes out very bland. Another thing to consider is the weather. Is it windy? Good luck cooking your pig its going to take 2 or 3 times as long. Is it raining? Now you aren't going to be cooking at all. You can put a canopy up but unless its 15 feet in the air the heat is going to melt it to bits.Presentation: When we have done pigs in the past they are the star of the show. People like to sit around the open pit and smell the delicious food cooking up and enjoy the setting. Most people sit around the fire interested in the process. With the caja china you see nothing. Its boring as can be.Clean up: my biggest gripe. This thing is disgusting. There are no sealed seams here. Anywhere. Everything leaks like the titanic after striking a glacier. So that means pig fat and blood is oozing and soaking into all the cracks and crevices of the open pored plywood. To really clean this thing you need to do a complete tear down and scrape every surface clean. No one wants to do that and this is a breading ground for illness and if you store this beast outside without a proper cleaning you are going to have all sorts of critters crawling all over it adding to the grossness.Mods: Since i bought this and im saddled with keeping it, ive decided to improve on the design. Ive sanded smooth the plywood and treated it with exterior marine grade polyurethane on all sides. Hopefully this makes cleanup easier and will block stuff from soaking into the wood. Im going to add a smoker box or 2 to the inside of the grill to impart some smokiness to the food. Im am using a 600 degree food safe silicon caulking around all the exposed seems in hopes of keeping out the grossness and also should help seal the heat and smoke in for better cooking. Conclusion: Dont buy this thing if you can help it. The QC is terrible, the flavor is bland, clean up is horrible and if you dont do it you are inviting trouble, and lastly this thing is huge assembled. Storing it is a pain. The second i decide on a dedicated pit area this thing is going up for sale on the marketplace.

Works great!
It does exactly as it says, even has the directions written on the box. Only con is the metal bars and brackets bend super easy. I will attempt to reinforce. Others than that...fun family time!!

Does the Job... but
Does what it's supposed to do..You can cook a pig in it.. . Construction is really.. I mean really cheap.. bolt holes don't line up properly for construction.. had to put a ratchet strap around it in 3 places to get the holes to line up enough to get the bolts in.. and the finished product ends up not being square. Gauge of metal is too thin, and I will be making reinforcing parts for the bottom out of heavier gauge metal. The brackets that hold the "handle" in for moving it about, completely bent on the first use... with nothing in it, just the parts. Laser etching on end of unit says start with 16lbs charcoal, but manual says 18.. Like I stated.. it will cook a pig, but probably won't live through more than 2 uses without falling completely apart without some modifications.. Also, packaging is not so good.. several parts were dented/deformed during shipping... ok it was shipped ups, but there is nothing really protecting this thing from any kind of impact... UPS will not assume any liability if there is not 2" of packing all the way around. Also.. and this is kind of funny... The Pictures on here of the assembled unit... it's assembled incorrectly.. long handle should be opposite wheels.. lol
