Too much water - sticky mess that cannot be handled. Paper towel can be used to absorb extra moisture. Make small balls with your hand. The size depends on the ultimate purpose. You can press the middle of each ball to create a small indentation. Drop into boiling water. Wait 1 to 2 minutes after they float to the surface. Scoop out and drop into a bowl of cold water (does not say icy cold). They are ready to be used in a recipe that calls for them. Can be stored in freezer for about a week - boil again before using. Shiratamako does not become hard when cold.

Do I need to sift it to remove the clumps? Or just use as is?
