Almazan Knives vs Almazan Kitchen
There is confusion between the video production brand Almazan Kitchen and the Spanish knife makers Almazan Knives, from Almazan, Spain. I was confused at first myself. After some basic research, I understand that Almazan Kitchen does not make their own knives but orders premade knives from China. They are sharp, but by no means worth the $400+ they are charging. Almazan Knives has been making knives for a while, hand made. I ordered the Serbian chefs knife seen in these videos from Almazan Knives. It cost around $110 shipped from Spain and I just received it today. The carbon steel is thick and sharpened at the edge to slice through anything. Amazing quality for the price, also arrived with a leather sheath. I saw on their website they are also offering layered steel versions for about $50 more. I'm genuinely impressed with Almazan Knives - they are actual knife makers, while Almazan Kitchen are video production. On a side note: Almazan Kitchen complaining that all other knives other than their $400 imported versions are fake is the reason some think that Almazan Knives (Spain) is a knockoff. This style of knife has ben around for a long time and it's called a Serbian chef knife.

Not what you expect for the price
After watching many many videos of Allex and Boki using this knife I was very disappointed with what I got. The knives used in the videos have a flat or saber grind. The one I received has a saber with a scandi type grind and then a secondary bevel added to that. There are heavy grind marks on the edge. AND it was not sharp. It took me over and hour on a stone to get it to cut paper, The edge profile is so bad that it is difficult slice food straight This does not happen with a flat grind which this knife does not have.It may be 1095 carbon steel as it does rust easily, but I expected that - not a problem However, if I want to use this knife in my kitchen I will need to have the blade re-profiled. My $30 Japanese knife if way better...This knife is not what you see in the videos.... Don't waste your money....

No other way of putting this but straight facts! The knife is DULL!!The style, the weight, everything other than it being dull, I like about this knife. Butt I know have to find the means and method to properly sharpen this knife without ruining it.

Almazan knives
These are very good knives. I have bought 4 of them as gifts. They call them Almazan knives as if they were made in Almazan Spain.. that’s a stretch. They are most likely made in Pakistan. The marketing company is a Pakistani company and they ship containers thru the port in Oman.. pretty far from Spain. I don’t appreciate the false marketing but they are good blades and I am satisfied with the value equation... just wish they were honest about where they’re produced.. it’s no biggie just a reflection of who they are.. I am guessing that if they advertised the product was made in Pakistan that Would suggest lower quality..

Carbon steel knives rusting? Here’s why.
The only down side to high carbon steel is that it will rust if you do not take care of it. To prevent this, keep your knife as clean and dry as possible after use, and apply a light coating of oil periodically. For culinary knives, olive, vegetable, canola or sunflower oil or food grade oil is fine. Both carbon steels and stainless steels contain iron which oxidizes when exposed to the environment, creating rust. ... Carbon steel does not typically have enough chromium to form this chromium oxide layer, allowing oxygen to bond with the iron which results in iron oxide, or rust. don’t blame the carbon knives! Haha

dull blade
ordered this knife directly from Almazon - received it about a week ago - beautiful knife, good grip, good solid weight - won't cut a damn thing - blade as dull as a butter knife - used a wetstone and sharpening steel to no avail - no customer service number to call - sent three emails, received one response asking for a photo - sent videos of me trying to cut a lemon, a lime and a tomato - no response and my emails were kicked back - i gave one star on looks and feel - a shame when companies don't stand behind their products -

A great knive, my go to knive!
It is my go to knive! By all means, it is not a high end product, but it gets the job nicely done. It came sharpend, but I had to fix the bevel just a lil bit. So far performs well on everything I've thrown at it. The handle is solid, with a nice grip, and the sheath is well made, real leather, and has a perfect fitting. I can't speak in terms of hardness, but it was easy to sharpen, and it holds the edge up to now.
