Is it large enough for a 12 lb turkey ?

The Toastabags Oven & BBQ Bags will NOT hold a 12lb turkey.

Can these bags be used in the microwave?

No they are not made for microwaves. The instructions indicate they are for use in the oven and on the barbeque. "Keeps, BBQ, griddles, and hotplates clean." I have only used them in the oven. They are great for fish; this is what I use them for most frequently. There is no mess to clean up. There are great instructions on the back of the bag for their use. I have frequently used Reynolds oven bags for turkey and roasts. It is the same concept for the toastabags only using smaller pieces of meat, fish, or vegetables. The bag indicates the girdles and hot plates. I have no experience with that so I can't comment to its efficiency. If you don't mind using the oven for a few minutes longer than a microwave, I think you will be extremely satisfied.

Can you put boiling water in to hydrate meals?

I would not recommend adding boiling water. If you add water or broth it should be room temperature. This way it heats up with the meat, veggies, etc. I swear by these bags, moist seafood/chicken every time!
