Will this caramel set hard at room temperature like for candy making?

I don't think so, it's more like a soft, rather liquidy caramel sauce, I don't think it would harder at room temp (it doesn't in the fridge) Also, for what it's worth, be warned this is INCREDIBLY sweet. I love caramel in all it's forms (and got this after going on a low carb diet), but I can't really eat this straight. But it's great mixed into other things a like a sweetener and flavorant for caramel whipped cream.
