What size chicken can you cook in this red luby

I would not set more then 3 pounds on the shelf

Why when i select the "top" (broiler) position do only the bottom heating elements come on, and the when i select bottom, only upper comes on????

You could be misreading the symbols. The wavy line represents the heating elements. If that"s not the case, contact Customer Support, maybe the unit is wired incorrectly.

How many racks can I get?

Right in front; slides right out. Well constructed; clean it regularly & very little sticks to it. We have one at home & one at summer house--excellent product especially for the price.
