Why is this called balsamic vinegar in the title, but it's actually red wine vinegar? it's not igp certified either.

Traditional balsamic vinegar is made only with one ingredient — “grape must” (in Italian, “mosto”), the sweet juice of freshly pressed grapes — that is boiled to a concentrate, fermented and acidified, and aged for 12 to 25 years or longer in wood barrels.

A highly crafted product, traditional balsamic vinegar is produced in small batches. It is sweet, tart, dark, syrupy, and expensive. You will only find this seriously pricy vinegar in a specialty store or online, generally ranging in price from $50 to $200.

Modern commercial balsamic vinegars (what you will likely find at your local grocery store) combine concentrated grape must with wine vinegar to speed up the acidification process. This vinegar is typically aged from 2 months to 3 years in large oak barrels.

Mixing grape must with wine vinegar allows producers to make a high volume of balsamic vinegar much more efficiently than using the traditional method. Depending on the mix of sweet grape must and tart wine vinegar, balsamic vinegar can vary in its sweetness. It can range in consistency from thin to syrupy. These usually range from $4 to $20 a bottle.

Is it thick and syrupy, or runny like grocery store balsamic vinegars?

Our balsamic vinegar is designed for salads. We cooked our freshly harvested grapes to make fresh must and then mix with our fresh wine. The percentage of wine, determines the thickness of the final product. We mix about 20% grape must to 80% fresh wine. Then we add our 41-year old starter and age for 8 years in wood. Next year we are planning to introduce our balsamic glaze. This will be definitely thicker. Please note that our vinegar it is not made from concentrate therefore it will not taste like sugar. Instead, it is made with fresh must, fresh wine aged 8 years in wood. Once you put a drop in your mouth, the difference will become very evident.

Is it organic?
Yes, it is. However, we have chosen not to become certified and there are reasons for that.
When we initially launched Papa Vince, we had the organic certification. But a good friend of mine, a lawyer for the FDA, advised me to drop the certification.
Why? 
Big companies are using the certification as a tool to remove small competitors from the market. 
Their technique: assigned lawyers whose primary job is to yearly question the organic certification of small competitors. 
The rest, I leave to your imagination.

Have you noticed how hard is to find a small brand with an organic certification?

Certifications are created to protect consumers. That is what we are told.
In truth, they are created to protect the monopoly of the big names.
