No it doesn’t Wish it had as I’m a novice at this ! ( first ever dehydrator) I’ve looked on the internet for temps & times. Bit of trial & error!! Not always successful, but generally ok. Love the machine, would be great if they gave a small booklet with recorded times & heat

Metal wire mesh. I am pleased with the quality of them.

Are leather trays and plastic mesh inlays available for this machine ?

I have never heard of a leather inlay unless you mean a silicon sheet to make fruit leather ? I use an oven liner available from Sainsburys which I trim to size. Cheaper and just as efficient as Excaliber Para Flex Sheets.
