Would this work on outdoor knifes?

I would think if the knives are fairly sharp this would fine tune them.

No the sharpener itself doesn’t need to be cleaned, but don’t forget to clean the knife blade before using it. I will have fine metal shavings on it.

What is the grit of the sharpener?

Not enough. the one I was replacing is better than this. So the answer is a very fine grit
