The Black Nile flours flavor is beyond words, but I wish it was more affordable.
First bake with Barley Flour and my eyes rolled into the back of my head with the fantastic flavor with this flour. I am a true whole grain artisan sourdough baker by heart, and I love wholegrain style Wheat and Rye sourdough loaves. I never baked any loaves using Barley flour so I figured that I would try it. I followed my instincts and went with an organic white flour 500gr. and 100gr. of the barley flour 90gr. starter. I went with a 75% bakers' ratio. The dough worked as expected but I noticed toward the final stages that the hydration was a little higher than I liked. The Barley and white flours really absorbed a lot more moisture than was needed, but after it proofed in the fridge overnight, I baked it and it came out nice with a descent rise. After it cooled and was cut, I tried it with butter and I was elated by the flavor. The loaf had an earthy sweet (I used a tsp. of black strap molasses in the recipe) and could not be happier with the quality and flavor that I received using this flour. I cannot wait to try the barley flour with rye and cut the hydration down on the next loaf. Overall, the Black Nile flour is fantastic, and the flavor is beyond words, but I wish it was more affordable. UPDATE: 2/14/26 Sourdough Rye/Barley onion Rye loaf. Flavor was exceptional and working the dough was as expected.

Dark and fresh flour
Good and fresh flour. Makes a nice flavorful loaf of bread. Add gluten or zantham gum if you prefer less dense loaf. Makes a dark colored loaf.

Perfect addition to bread for something a little different
This flour made a wonderful addition to my sourdough bread. I did 70% bread flour, 15% black Nile barley, and the other 15% rogue de Bordeaux whole wheat. The aroma of the flour itself has, I want to say, a faint cinnamon note. It adds nice color and flavor to bread, it's quickly becoming a favorite.

Fresh, bakes well
Love the freshness! No rancid smell, fun charcoal gray speckled color, bakes well into dark brown color, like gingerbread. Finely ground, nutty taste, makes a good zucchini and carrot cake, rises normally, substituting for 50% of AP.

Packaging was not good.
The reason for 3 stars is because packaging was not secure enough for shipping a bag of 2lb Barely. The bag arrived with several holes and the barely spilled inside the shipping bag and all over my counter. The bag was not in any secure packaging, it was placed directly into the shipping envelop. The barley is grounded very thin, the color is black with a purple shadow, it's very dry. For bread, make sure you eat it as soon as it comes out of the oven. Although my bread was hard, it did taste super good. The product is very healthy and great alternative for white flour. Also, I had to use almost all 2 LB to make 3 little circles of bread. If you are planning to feed more than 3 people, make sure you buy two bags of 2LB.
