Use carefully
Very, very sharp. I used it for trimming the fat off a leg of lamb. I use knives often in cooking. I nicked myself a couple of times with this knife. There may be a learning curve to using it.

Nice boning knife
I already owned the 7-inch model of this knife (not to be confused with the 7-inch fillet knife, which looks a bit similar), but this one is different in more than just length. The blade is taller and sturdier. This makes it well suited for tougher work that requires less precision. Either one could do both kinds of jobs, but I believe in having the best tool for the task at hand, so I'm quite happy to have both. I try to warn people when making these reviews: the TUO Black Hawk series is very nice, as are the TUO Falcon , TUO Goshawk, and TUO Legacy lines, but avoid the TUO (Black or Fiery) Phoenix knives. For reasons that I don't know, the Phoenix knives have a huge defect rate, ranging from crooked blades to cracked pakkawood handles.

Poor engineering &quality control
The three handle studs on both sides of the handle protrude past the wood inlay. Edges of the studs are sharp. Very uncomfortable to hold. I did not use the knife. Studs could cut or at minimum irritate your hand. Handle also felt extremely wide and bulky.

4.5 stars! Great knife, beautiful box -- needs just a teeny bit of polish in the handle.
This is an exceptional value of a knife, it's made from high quality materials, is well balanced, and extremely sharp. I've so far used it to carve up some meat we picked up recently and I was very happy with the way it performed. The knife feels good to hold in the hand, it's got a good weight to it but doesn't feel cumbersome to hold. The one minor issue I had with my unit is that the spine of the knife that runs through the full tang handle is not as smooth as it should be, I can feel the edge in my palm. Whilst it's not a deal breaker, it's just something that some may not like -- that's why I deducted 0.5 points from this review. Overall, this is a great knife -- it comes in a really nice box, and can be a great gift. I would happily buy this again if I wanted one, and I hope that the manufacturer works on the finish just a teeny it!

It's a great knife and the price is great as well
The slightly heavy handle weight was as balanced as described in one of the videos for this boning knife. The handle bolts are what I prefer in a kitchen knife, and was another selling point for me. It has perfect blade length and rigidity. If TUO makes other such knives at this cost, and if I need one, I will happily buy from them again.

It's a good knife for big hands
This is a good knife, but the one I received for review is not as well finished as it could be. After being dazzled by its rugged good looks in the box, the first thing noticed by everyone when they pick it up isn't its fine balance, good heft, or solid construction, it's the rivets and tang and that cut slightly into the hand. Thats a shame. Don't get me wrong, this knife does everything I need it to do. It is strong, sharp, and has a handle well suited for big hands, but all the metal components [that's the rivets and the full tang] sit just proud of the handle and make it slightly uncomfortable to hold. My simple solution is to wear cut-proof gloves when I use the knife - problem solved. Final verdict: This a nice boning knife that's worth the asking price. It's built to last a lifetime and that makes it a good value.

Great Value For A Solid Knife
This is now the second knife I have tested from TUO and I have to say, I have been very impressed with both of them. I've been using my great grandfathers deer antler handled boning knife for about 20 years and the blade has gotten very thing from about 100 years of sharpening. So when I saw this available to test for the Vine program, I figured I'd give it a go and see if it can retire my antique knife that I've loved for two decades. I'm always going to list it as a drawback that TUO doesn't include a sheath with their knives. Even a dirt cheap plastic sheath would be better than nothing. But, I also understand that they keep costs very low and I would never consider it a deal breaker or worth deducting stars over. They package in pretty nice boxes and I'd rather see a cheap box and have a sheath included. But enough ranting about the one and only thing I don't like about this knife. The presentation as stated is nice in the box it is packaged in. And the aesthetics of the knife are pleasing as well. It could have a little more polishing right out of the factory, but that's just being nitpicky. The handle is nice and fits very nicely in my hand for easy control. And while not precision balanced, the balance of the knife in your hand is also very nice. It is SHARP out of the box. On par with the sharpness of knives that cost five times the price. Now it won't hold an edge as well as a more expensive counterpart, but I honestly don't mind sharpening knives at all. It took almost a month of use before I noticed any dulling of the blade, and it wasn't significant enough to make much difference in performance. You really can't expect much more than you get with this boning knife at a price point of $23. It has for the time being retired my great grandfather's boning knife which I have since put into a lightbox along with some other knives and tools from grandparents/great grandparents. If you are shopping around for a good boning knife for occasional use, I'd definitely recommend this as an option to consider.
