What grade grit would this be equivalent to?

i consider this to be a fine stone. maybe 300 grit or so. i use it to stone the chuck on my surface grinder.

will this sharpen kitchen knives

Yea, though it might be considered small for that application.

i need a stone just to touch up the table on my surface grinder would this work?

If you are just trying to take off a light film of rust or take the edges off of your surface grinder table I think it would work fine.

Would you use this for ski burs?

If they are smaller burs I'm sure you could. The stone is pretty fine. If you have deeper ones you might need a grittier one
