will this thermometer work on the top of a stove rather than the flue?

yes, but it's magnetic back has to be against the hot part of the stove - so if the top of the stove was horizontal, the thermometer would also have to be horizontal.

My stove is built into the wall so can't sit on top, can anyone advise me how I can monitor the temperature? Can this go inside it ?

I wouldnt advises puting inside the fire. Could you not mount it to the door or get one of those strip type ones.

can it be used with insulated chimney flues

The reading on the thermometer will not be as accurate on an insulated flue pipe as there will be less heat transference. Often insulated flue pipes are made from stainless steel, in which case, the thermometer will not magnetise. Alternatively, you can place the thermometer on the flue collar for an accurate reading.

will this work properly on a solid fuel stove

I have mine placed on the side of my wood/coal stove and have no problems with it at all, it shows the heat level at all stages of burning, from lighting through burning to cooling down. Would recommend it no problem.
