This was not a type of dried mushroom that I had used before but absolutely delicious in risotto. Company gave a good quick service so I would use them again.

Good quality dried chanterelles, full of flavour and great for quick dishes.

A small handful of these mushrooms can provide a lot of umami savour to a wide variety of dishes. They need to be soaked in hot water for 20 minutes prior to cooking, but that isn't too much of a problem if you're prepping other ingredients at the same time anyway. You also end up with a rich mushroom flavoured liquid which you can use in other dishes, although I think using both the mushrooms and the liquid could be a big overpowering unless mushrooms are already the main ingredient. The mushrooms have a satisfying texture once cooked and they're a very useful food cupboard item to have at your disposal.Overall, they're expensive, but a little goes a long way in terms of flavour.
