Trader Joe's Pitted Kalamata Olives are dark, eggplant colored olives that are ripened on the tree and pitted. They are marinated in extra virgin olive oil and white wine vinegar, as is traditional in Greece.

Yummy Olives for Pasta Salad
These olives are very good. They are not horribly salty like some are. I use these in a pasta salad I make with marinated artichokes, sundried tomatoes, pasta, mozerella, parmesan cheese (shredded), fresh cucumber, & fresh tomato. Toss it all with Ken's Olive Oil & Vinegar salad dressing. Yum. The olives themselves are not soggy. They have a good taste to them. But it is a product that is a little bit pricey if purchased online. In the stores it is not very pricey.

Beware of the pieces of pit!
Good luck with these when you chomp down and find there is a pit piece in these pitted olives and your tooth hurts right down to the nerve.
