What is the difference between ti and rm?

TI is just transglutaminase and maltodextrin with no added helper protein. It contains twice the enzyme level as RM or GS. However, it will not bond as wide a range of foods as the other preparations.

I'd like to buy the large bag to save money. Any estimates on how long it will keep if vacuumed and store in the freezer? Thanks

I have had it last about six months but then I was done with it so not sure how much longer it could have gone. I leave it in the foil bag also to keep light away. No idea if that matters but that is what I do

Can this be used on a phosphate injected steak?

Phosphates should not affect the usage of the product. It specifically links the proteins glutamine and lysine. It will not bind other proteins.

Does this need oxygen to work? I want to use it and then vacuum seal the meat.

No just the moisture of the meat is all you need.Then seal away. What ever you put it on it is stuck for ever. Do not get it in your eyes. I am a chef. Best of luck.
