Why am I having to stop every few minutes to clean the sprayer?

I had the same problem. You have to strain the paint when pouring it in to the reservoir. This will fix the problem. I bought a metal food strainer for two bucks and it works great. I go for hours (painting my house) without having to stop.

I am painting my cabinets white using semi-gloss paint for trim and doors will that work with this sprayer or is this used more for stain?

This should work with paint, but the paint needs to be diluted. I used my to paint wood panelled walls with white latex paint and it worked wonderfully. It takes a few tries to figure out the best dilution. I also found that I needed to keep qtips handy to clean the nozzle every once in a while.

can I use this for Plasti Dip?

Of course. There is a video on YouTube they were using It.

will this work with using paint with primer?

It should work fine. I used it with primer, latex paint and oil base enamel paint. Just besure the paint is not too thick.
