Global G-64-6 1/4" Hollow Ground Chef's Knife

Excellent knife, great value

Absolutely love it !!

It's not mentioned in the listing, but this is a Santoku knife, a very versatile Japanese style chef knife. My wife bought this knife on Amazon a few years ago (in a set with a 3" paring knife). I also have a Global 7" Asian chef knife. I love all of these Global knife, but found myself reaching for this knife 90% of the time. I have a medium-size hand and this knife is just perfect for any kind of kitchen prep work at home. I use the chef knife only for something big like a prime roast or a big turkey. For almost everything else from cutting meat to slicing veggie, I prefer this knife. It's quite a surprise that this knife doesn't have as many reviews as other Global knives. I suppose most ppl would go for the 7-inch Santoku, which I have tried out at my friend house and found it's slightly too big for typical cooking prep work at home.By the way, I find Global knife super sharp right out of the box, but they will go dull over time just like any other brand. The thing I love about these knives is the fact that they can be sharpen up again with a wet stone or good sharpening rod in no time.For $60, I don't think you can go wrong with this knife. I highly recommend it.

Truly superb and universal knife from Global. Best cutting performance due to convex edge unlike Shun and similar offerings. Yes a bit soft comparing to VG10, however much easier to sharpen. This particular knife probably difficult to figure out if shopping online due to some confusing naming from Global. Typical Global's chef knife shape example is 8" G2. Their similar but smaller 6.25" G63 offering somehow called cook's knife, however this G64 chef is shaped differently, more like santoku with wider blade making it truly universal excelling in vegetables and everything else. Price is the bargain. Must be addition to every kitchen. Have 12 Global knives and wondering how i missed it before. Just buy it and enjoy.

I've occasionally splurged on higher end knives, only to be semi-disappointed. what was all the hype about? Then I purchased this Global Japanese style knife. O. my. goodness. total game changer. i actually get pumped to chop veggies cuz its so darn easy. I purchased 2 other globals at the same time - a smaller vegetable knife and a 5" not hollow-ground. This 6" is by far the easy favorite and the one i happily select from the drawer pretty much every time. You cannot go wrong with this knife, especially if you have small to medium sized hands. which i do.
