Is this the oil for the 3.0 Duramax?

Based all my research that would be a yes. I am currently using this oil in my 2021 GMC 3.0 Duramax . It has performed well in the short time I've used it (3000K miles). My plan is to go to the Amsoil 0w-20w at my next oil change. Amsoil was not available at my 1st oil change.

Why no specs listed like "VW 508.00 509.00"?

What is the Castrol 0W-20 oil that is 508.00 approved? Identifying these is harder than I though it would be...

Is this dexos-d rated? Can you bundle 8 quarts rather than 6?

The quart bottles I got do not show it as DexosD approved but the Mobile 1 web site does list it as approved. It would be up to the seller if they want to break 6 quart cases to get you 8. I am using it for a 7 quart application and bought a couple of cases so I will only have to buy one case for the next 5 oil changes.
