If feel that taper candles would be lovely with this style holder. In fact, that's what I use mine for! They're perfect for a polished look.

How wide is the opening for the candle?

Regular to only fit taper candles for sweet sixteens. Tea lights don’t fit it.

Would open ended glass chimney that is 14" high and most importantly 2.5" deep fit these?

I don’t really understand what you mean by 2.5” deep but if its a candle in which the base is 2.5” then no. The candle holder has an inch at most in diameter.
