Q: Can you use this with enriched dough?

If the idea is to make a sweet dough then yes, you can use them with any dough

Q: How many grams or ounces per baguette can you use per section?

I don't know the grams. I just divide my dough into 3 even loaves. And if I want thinner loaves I divide it into 4! Mine is a4 slot pan. I am pleased with it. The dough does not-stick. And they slide right off the pan.

My first set of this baguette bread pan was bought 2 years ago and last year a second set was added to my kitchen to make more bread at a time. They are non-stick coated so baked bread did not stick to the pan. Occasionally, dark marks on the pan due to water spray on rolls before baking. This happen when flour coated on the rolls meet the water and going under 464 F of baking. When this happen, I just scratch it off with finger nail or use plastic spoon to remove it. It's a good product and reliable for baguette baking. Hope this give you a peace of mind.
