Yes it will. If the bike I'd bumped or moved accidently it will shut off. Just takes a few seconds. If battery is low it will turn on and not turn off until you insert the key.

Is it possible to just use this as a physical disc lock without engaging the audible alarm function?

It's not. When you lock it, it sets audible alarm.

Will this fit on Segway-Ninebot?

Not sure which Segway Ninebot you have, but if it has a disc brake rotor, this is designed to attach to the rotor and prevent the wheel from turning.
