Is there a lot of steam release when making stew etc? i need the extractor fan on when using a gas stove and pot and it's very noisy.

No - it is all contained within the pot as it slow cooks - condensation on the lis and the smell of cooking stew but no steam

Not sure but I am sure if you ask works customer service they can sort out a replacement if not I would be sure Amazon would help sort out a replacement pot

What is the auto shut off? How is that when the food cooked? Want to buy this but not 100% if it doesn't turn off

No there is no auto shut off, however if the slow cooker is left on for an extra hour the food will not be overcooked, more so if the lowest heat is selected - or plug the cooker into a timer and set it for your ideal cooking time
