Does this machine have a high carbon footprint?

The Chinese carbon footprint set forth in another response for this question is a fantasy - It is not made in China, but in the U.S.,. I have other Vitamix products and they are generally well made. I am currently taking a hard look at both models of Vitamix kitchen composters as well as some of their competitors. So far, they're looking pretty good.

Can you take the scraps and store them for long periods of time before using them?

It is not recommended to store the scraps in the foodcycler or it's container for long periods of time as it will affect the filter. If you want to store scraps for future use, you can put it in the fridge (for a few days) or in the freezer for longer period and just let it thaw out at room temp before processing. I do that when I have higher scrap volumes and it works fine.

Where does the Moisture go? is it released as steam?

Technically, yes. The heat cycle is first, prior to grinding after the material is dry. You won't see any steam (or feel any heat), but the water escapes as vapor.

will it grind up turkey bones ?

Yes, definitely. The only limitation would be size. I put chicken bones in mine all the time, but I would think turkey bones may be too long to allow the kid to close properly.
