Can you fry chicken in it

It’s like any NO COVER cooking pot you can deep fry/roast with it..just remember to adjust heat accordingly. ***Remember: Aluminum pot material conducts heat and raises oil temperature quicker compared with steel pot material.

Would like to use this for canning. How many quart jars will fit in the 8 liter pressure cooker?

All things equal it would depend on the jars dimensions on how many you can fit. Standard measure conversion 1 liter =1.05669 US quart. Hawkins instructions/recipe book has a Sterilization method applicable to my aluminum 5 liter with exceptions in: How to cook in it, releasing pressure, separator cooking, cleaning/care, and adopting recipes. I would recommend to find documentation for use of the 8 liter from the manufacturer Hawkins. It’s a different experience for each person and product type.

What's the difference between classic the blue label one?

I looked in the comparison of products on Amazon. It seems that the blue label is a newer model than mine with a more thick bottom. Else it don't seem there is a lot of difference. Good luck with it.
