Brand Spanking New! PASSED THE EGG TEST WITH FLYING COLORS! (Lentils did too!)
I opted for the "Open Box" from Amazon which was well packaged. I used Barkeepers Friend to erase a stain on one of the copper rings. Result... Sparkle and shine! I always do an Egg Test (over medium). It PASSED! Yay!I The packaging was so well done; it took me a while to get them out w/o scratching. I washed each one with Dawn and Barkeepers Friend to remove the warehouse dirt and manufacturer film. Then the egg test using low heat: I added avocado oil, after seeing a hint of smoke, I lowered the heat even more, added butter as it melted, it began to bubble a bit; that's when I dropped the egg and turned off the heat entirely after the egg release (in no time). The heat from the pan continued to slowly cook the egg and I flipped it and covered it with a lid. Both sides of the egg whites were fully cooked with no burning, no browning and no sticking at all! Result, pure white eggs with moist yokes. I checked the copper and there was NO DISCOLORATION AT ALL!! then I washed, rinsed and dried the pan (no issues). THESE PANS WERE BRAND NEW in an open box! WHAT A DEAL! .... Pictures will be uploaded later. TIP: Following instructions helps a great deal. THESE POTS ARE AMAZING, AND BEAUTIFUL TO BOOT! May 19. 2026 UPDATE: The pictures might not be in order of events; however, these are some lentils I cooked. There was no sticking at all. I heated the pot until the water drop danced; I sprayed with avocado oil, let it cool and then I poured in the water and rinsed the black and red lentils and added to the pot with chicken broth. While they were coming to a slow boil, I added all my seasoning, and 45 minutes later, VOILA!..Sheer perfection. NOTE: The copper ring got a little darker; but once I washed it with dawn and barkeepers friend, the copper was like new and sparkly (white vinegar helps that too)! I also wanted to add, I only cook with LOW-medium heat and nothing boiled over. The lid kept everything nice and neat. As you see, the copper ring went from deep copper back to bright copper with very little effort (BarKeepers Friend) and these pots maintain their brilliance and shine. The (no-stick) trick I've learned is to preheat, oil down and cool. Then the cooking begins. If you see any staining or rainbow which might be a result of food types or too much heat, just a LITTLE WHITE VINEGAR SOAK CLEARS THAT UP. BARKEEPERS FRIEND KEEPS THE BOTTOMS LOOKING LIKE NEW AS WELL. Low heat keeps things manageable and stainless steel will continue to be EASY TO CLEAN.

Great pans, heat up fast like professional sets
Great product; the copper core helps the center heat up fast, and you're cooking immediately, unlike other pans. If you aren't used to this, you can overheat the pan and burn your food. ALWAYS SEASON THE PAN SO THAT FOOD DOESN'T STICK.

Happy with this purchase!
These are great pans for the price. When I read some reviews of people complaining they were too heavy, I knew this was my set. The bottom of the pans are built like a tank, very solid. My only gripe is that the outsides of the pan are too thin in my opinion, especially the ring/edge at the top of the pan. You definitely don't want to drop these and hit that outside edge. But if you take care of them, they're built good enough that they'll take care of you. Don't go smashing them together or dropping them and they're plenty sturdy enough to last. I was a bit confused over pan terminology with all the different choices, and in hindsight I would have gone with the fully clad Analon pan set which are more substantial, but you also pay for it. Out of the box, these are very elegant and the finish looks high quality throughout. I had a couple small (almost imperceptible) dings on the larger saucepan, insignificant enough that I didn't bother customer service. Cooking on them is the same experience I've had with other stainless pans-- don't expect them to be non-stick like teflon pans and read up on how to properly cook with stainless. Once you do that, you should be fine. I'll burn some stuff to it on occasion, but it's usually inattention / user error on my part. I see lots of reviewers complain endlessly about burning stuff, the metal discoloring or not maintaining the mirror finish it had when new in the box. I'd say these over overblown. You can burn food on any pan, there's nothing about these pans that make it more or less likely to burn food than any other stainless pan, in my experience. It's not going to have some magical properties that make it impossible to burn food. And for that mirror finish, It's a dang pan to cook with, not a museum exhibit. No pan will look shiny new as it did in the box after months/years of use. If your expectations are reasonable, these deliver. For me they've held up fine and I'm able to restore a decent finish that looks nice with some scrubbing. Just like any other copper on the planet, the copper ring will tarnish/dull with repeated use and washing. I use some Bar Keeper's Friend and a green scour pad when I want to bring back the shine and for the most part it works well. I've owned them for a couple months now and they still look good; I have zero complaints. If they could beef up the metal on the outside of the pan some, this set would be the set to beat. Update about 7 months in: My wife made a random comment to me today-- "I love these pans." That made me revisit this review. Before we purchased this Anolon set, I had to convince her to try these because previously she was stuck on a brand that-- I won't call out names, but purported to "pamper" you, the ones you buy at parties. I wasn't a fan of those pans (mediocre quality) nor pyramid schemes, so her giving these a blessing 7+ months later speaks volumes. I've used them plenty and I have to agree with her. They're awesome on our induction range-- the usual foods stick if you're not careful (eggs particularly, and thick sauces), but most don't. When stuff does stick, washing with a scrubbing pad, so far, restores it to near new condition. All the pans in the set, to this day, look nearly new (the copper ring on the outside has dulled some). That's saying something considering I have 4 kids, two of which are in their early-teens and use them occasionally by themselves. I still stand by my statement that the outsides of the pans are a bit too thin-- but they haven't been damaged throughout these months of heavy use; we cook daily with them and they still look great. With the way these have performed for us, I don't regret not buying the more expensive all-clad plans (that Anolon also sells) after all. 1 year update = still love these pans. Finish is still beautiful. Shines like new, even the copper if you use some bar keepers (scrubbing powder) on it. Nothing has burned to it that left any permanent stains, they're terrific pans and they get used a lot! Always seems to heat even and so far they have proven quite durable.

this brand swears to be healthy !
I found them to be good looking and just enough for what I need. the pot seem a little smaller the I expected but the is opinion only the Quality seems to be good-I will let you know how they heat up The thickness and heaviness seems to be right on the money as advertised The color is pretty and the value will show upon use. this type of product is very personal- a cook has different preferences then others do They stack well and the packaging was extremely well done! The copper in the pots say they will evenly heat we will soon see during my holidays I bought these pots due to the highly recommended NON chemical and poison coating they do NOT dip them in!! Remember what you cook with also bleeds into the foods you eat so this brand swears to be SAFE for healthy eating

Tiny Base = Design Flaw & Disaster Waiting to Happen
I ordered the 10 piece set of Anolon’s “Nouvelle Copper.” When the pans came I unboxed them and lovingly hand washed and dried each beautiful piece. As I dried them, I noticed discoloration in the copper, along the seam, where the disk/base attaches to the pan. The discoloration did not wash or polish out because it is a permanent discoloration from heat used to attach the bottom piece to the pan. I was disappointed because I want my new pans to be pristine and not flawed but thinking this was only a visual imperfection. Unfortunately, the 2.5 qt pan won’t even boil water. I quit trying because I don’t want to risk shattering the glass stovetop from the heat around the pan. The base that comes in contact with the stovetop is too small for standard burner sizes. I have taken pictures of the 2.5 qt saucepan as an example. The contact point of the base/disk is only 5” in diameter when most small standard burners are 6 inches. With the2.5qt pan with 5” base on the burner, the 6” stove eye turns on, gets hot and cuts off repeatedly because the eye isn’t covered. The area around the pan gets too hot, fast, even before the eye cuts off. The disk/base is angled and it could cause a disaster for someone. The part of the pan designed to take the heat isn’t all that’s getting hot. The “bands” of stainless, aluminum and copper are getting hot along the edge. The enclosed safety information states, in all caps, “THE ALUMINUM CORE MAY MELT AND SEPARATE THE BASE FROM THE PAN RELEASING HOT MOLTEN ALUMINUM . . .” I read that another reviewer had this to happen. The safety information also advises to “Match Pan Size to Burner Size.” Who has a 5” burner? The only type of burner that this set of pans would safely work with is an induction stovetop. This is misleading because it is advertised to work with all types. Even the packaging states “Magnetized stainless steel cap ensures compatibility with all stovetops, including induction.” yet it would only safely and efficiently work on induction. The handles on the pans are riveted. The handles on the lids are not riveted and appear to be pressed. The last picture is of the inside of the lid. Although the pans look pretty, they are not functional and I am returning them. It is going to be a major pain for me to fit all the pieces back in the box.

Awesome cookware!
I waited awhile before writing a review about my purchase. It’s been about 2 months now since I ordered this set. I have boiled, braised, fried, sautéed, steamed and even baked homemade English muffins in the 12” fry pan. All these pots and pans performed beautifully. They are heavy weight, nice to look at, cook evenly and are a breeze to clean. I wanted to replace my Anolon Hard Anodized cookware after 20 years of use, they held up very well but I was ready to make the switch to stainless. At 66 years old I didn’t want to invest in All Clad, it’s way too pricey. So after reading many reviews I decided to give Anolon Nouvelle a try. Not only did I purchase the 10 piece set but went back and ordered all the additional pieces after falling in love with them. One person in their review stated that the smallest pot tipped over and did not stand on its own….NOT TRUE! It is perfect! Other reviewers said this cookware was hard to clean and that everything stuck to it… NOT TRUE! I have had zero issues cleaning this cookware. If anything becomes a little stuck, I use Dawn Powerwash, spray just a bit and that’s it. I highly recommend these to anyone looking for an awesome set of cookware, you won’t be sorry.

The brushed finish is not my favorite...
The smallest pot tips over very easily when empty and doesn't sit well on my gas stove when it has liquid in it, it only stays upright when handle is pointed at certain angles. They heavy handle is nice for the other pots, but it's too heavy for the smallest. They have a brushed finish on the inside, which holds stains more so than smooth finish pots. With a gas stove the stains tend to sort of burn into the brushed finish when cooking. I wish the lids fit on the skillets, but they don't. I do enjoy cooking with them, they hold heat well and they look nice, but the set presents multiple challenges.

Great quality, superior cookware!!
I waited to leave a review for these pots and pans... so I could thoroughly test them out. Reading all of the previous reviews, I was very skeptical to buy them.... "everything sticks", "food sticks on all the time", etc.... I will say, yes, sometimes food will stick to these pots and pans, however, I have never owned a pot or pan that was easier to clean. I just rinse/ soak the pan for 5 minutes (normally less time than that), and the burned on food simply wipes away. Wonderful!!! My previous pot and pan set, teflon coated aluminum, had some kind of concentric ring pattern inside the pan, and food would always burn and stick on there. It was even more difficult to clean. Also, these pots and pans are perfect for the dishwasher too! My previous pots and pans had hollow handles that weren't completely sealed to the pan, so if not positioned correctly in the dishwasher, it would fill up with dirty dishwater. So annoying, un-sanitary, gross, and frustrating. No such problem with these. Solid handles, no where for water to gather. Perfect. One thing I did notice while trying to boil water in the large stock pot.... it seemed to take forever without the lid on. I think because I was used to the thin aluminum pots and pans, heat transferred more quickly, thus heating the water faster. So, keep that in mind when trying to boil water with these.... use the lid, and give it a little extra time. I would say only one downside of this set is the shape of the pots and pans. They have a tapered shape, so the base is smaller than the rim....which doesn't leave a lot of surface area contact to the burner on the stove. Hindsight, I might have looked for this exact set of pots and pans, only in a straight non-tapered design. Other than that, I am completely satisfied with my purchase. Wonderful set!!

Good set of pots
Its a good set. Takes a little longer to hear up that my previous pots, You also need to be careful and put plenty of oil as food can stick since you are cooking on metal. But they look great and distribute heat evenly.

Beautiful cookware
I bought this set of cookware for my new induction stove and they are perfect. They look good and heat evenly. I like the weight of them: substantial but not too heavy. The handles and very ergonomic and don't heat up at all. They are dishwasher friendly too.

Lovely to look at, hard to keep really spotless
Like others have noted, the small saucepan is unbalanced and easy to tip over without lid. The copper parts spot with stains easily and they seem to be too hot on 7 in induction to cook sausages. You really need to turn down the heat. they seem to blemist easily inside as well. But generally nice to look at and quality in terms of the handles and as general cookware.
