Does this flour make better tasting bread products than say king arthur all-purpose flour? i don't have the most refined palette, in case that helps.

T45 is cake flour (farine blanche). T55 is bread flour (farine blanche faible). T65 is bread flour too, in french it’s called farine de tradition. T80 is called farine de campagne and T110 is farine complète (whole wheat flour). I don’t like the bread make with T45 because it lacks structure. I use T55 to make white bread, T45 to make sponge and a mix 1:1 to make brioche.

I only do my crêpe with this flour and I am french, so yes, it is perfect for it.

Should I only use this flour for soft pastries (like cakes, crepes, muffins, etc.) and use T55 flour for things like bread, cookies, waffles, etc.?

We use it for everything, but mainly bread, because my wife has Gluten issues and this flour doesn't give her Gluten pain.
