They are SLIGHTLY curved like a scoop. If you google "bamboo salad hands" on Images, you will see some better photos than what the seller presents on Amazon and you can see the curve.

Do you need to use two hands to use these? What I mean is, can I hold a plate and use these to put salad on my plate at the same time?

No Diane. You need to use both hands to use both of them. If you had to hold the plate, the hand is big enough theoretically to use one to scoop up some salad like a big spoon, but to get the most effective use, you need to have one in each hand and scoop the salad onto a plate that is stationary.
