Ghirardelli also makes a 60% cacao baking chip product. Other than caco %, can you use the bar the same way as chips?

Accepted Answer

Yes. I've used both, but the bar far mote often for all sorts of cakes and cookies. And if you're making chocolate chip cookies, chopping the bar gives you both small chunks, small bits and shreddings for a more interesting cookie.

If this is 100% cacao why does the ingredients say, “may contain tree nuts, milk, and soy.”?

Here is what happens - many items claim they are free of differnt food, but then put this disclaimer on the back - the reason being that it is manufactured in a facility that also uses these items to manufacture other items.  I stay away from any foods that have this diclamer because the nuts, milk and soy are in the air and get inside the items that claim to be free of them. If you have any food allergies or sinsitivities, then don't purchase items with this disclaimer.

Is this processed with Alkali?

Alkali process is generally used with chocolate to remove oils to either make milk chocolate or cocoa powder.  As this is pure dark chocolate, it shouldn't have been processed that way.
