What are the exact measurements? A reviewer said 11 1/2 by 8 1/2. Is it really 8.5 inches? That would make it too large for my quarter sheet pan.

I just measured mine. I get 11 14/16" by 8 5/16". It fits exactly inside my restaurant standard quarter sheet pan.

Is it safe to trim/cut if it doesn't fit my baking sheet?

Yes, you can trim it. I have several sizes I have trimmed. You get a bit of discolouration along the edges you trim but it does not harm performance or durability.

Is it good to sit candy apples on ?

I would imagine candy apples would be fine. It's a "slickery" surface so the apples won't stick.
