Great for self processing of poultry
I own my own farm and we process chicken, duck and turkey on farm. This is my go to knife for both evicerating and piecing of poultry. It is very sharp and sturdy but have just enough give to be great at piecing.

Overall a great trimming knife
Bought this for deer processing two seasons ago and it is comfortable and durable. Takes an edge nice after getting rolled. A good balance between stiff and soft. I recommend this to friends for their processing of meat or trimming a piece of meat for the grill.

Fantastic knife for deboning and trimming meat. For that purpose, my expensive Japanese knives take a back seat. I've used this one a few times and it still has a razor edge.
