8 Inch Swiss Classic Chef's Knife - Non-Slip Stainless Steel

Used the same knife block set of knives for twenty years before finally upgrading to this. From that perspective, this knife was the right price and a great buy. Sharp enough to cut through fully thawed chicken without just tearing it up like the old one did. Comfortable fit in my big hand. Been using it for quite a while now. It does have a few small nicks in the edge, but we have more than got our moneys worth. Use it almost exclusively on these nice quality composite material cutting boards, rather than the glass cutting board we punished our old knives with.

These are well built, holds up well and a really good price for what you get. I have larger hands and I find that this knife works well for myself as well for friends with medium-small hands. Have used one for many years and it holds the edge well. Purchased this as a gift that I'm sure will last many years.

there's not much else i can say that hasn't already been said by so many other people recommending it. if you need a general purpose kitchen knife, this one works excellently and can serve like 99% of your cutting needs while cooking at home. it probably can't replace a serrated bread knife if you need to cut bread that is flaky or squishes easily, and there are some things you could use a paring knife for that would benefit from a smaller more nimble knife, and a long narrow flexible knife is still good for fileting fish to curve around bones, and if you need to chop through bones for preparing meat, then a cleaver is what you want. like i said this thing can't do everything properly, there are still some things a specialty knife is good for, but this can serve 99% of what the average person needs a knife for while cooking. it's made of good steel, it takes and holds and edge well, it's a great size, and the handle is good and ergonomic. if you take care of it and don't abuse it, this could be the only chef knife you will ever need to buy.

How’s it compare with other knives? In my long experience in the kitchen, this knife is a hands on favorite. A fine and versatile knife.

I cook a lot and I have at least 12 knives on rotation - some on the more pricy side and some cheap. Most knives work great at first and then quickly become dull, even with sharpening. As a huge fan of America's Test Kitchen, I know these knives have been their top pick for a long time so I'm not sure why I waited so long to buy this one. It is a whole new experience using this knife. You just can't understand how nice a good knife is when you've never used one and this knife is SO good. It glides through onions, steak even hard squash. I was actually scared to use it at first because it is SOOO sharp. I know that a dull knife is more dangerous than a sharp one but it really is such a huge difference from any other knife I've ever used. When I first opened the package, my heart sank a bit because honestly, it felt cheap. It is VERY lightweight. The handle feels like cheap plastic but it is VERY sturdy and is textured perfectly so you never feel like the knife is going to slip, even with wet hands. I have already put several other Victorinox knives into my cart and I plan to replace all my crappy knives with these. Highly recommend.
