the total width of the splatter guard is 12 3/4 inches and the stainless steel screen is 10 1/4 inches across

Does this fit the Le crueset 13" deep skillet that Williams Sonoma sells?

the splatter screen is slightly under 13" so I am not sure if it's a perfect fit.

Does the handle stick up?

No, it sticks out like a traditional handle once you fold it out.

Yes, works great with all pan sizes; remember it will stock out on sides of smaller pans, but not a real problem if you are careful. Great product, easy to clean if you clean it as soon as it cools, then grease does not stick and build up. I am very happy with mine.
