These are so good. Since most of us can't get to a Norman or Breton patisserie, these are a pretty good substitute for what you would find there. The first flavor is that of butter and lots of it. The Normans are not afraid of it and make some of the best butter in the world, alongside their neighbors in Brittany. You'll find cookies like this in any village or town in both regions. Crisp, buttery-sweet and tender, they are perfect with tea or coffee. They are not cheap, but in this case price does reflect quality.
