How sturdy is the helmet? Thin easily cracked plastic, or tough?

The helmet is pretty sturdy; the plastic piece attached is likely to get cracked over time. My little ones have dropped it and likely have stepped on it accidentally and to date no major Damage. It’s a good durable set overall.

Does the fire extinguisher spray water?

The fire extinguisher sprays water and it allows kids to imagine being a real fireman. It is great for outdoors, summer time , bath time, and it can also be used as a prop only if you don’t want the toddler or child to use real water.

Will this fit boys size 8-10

My fireman is a 4-5 and it might also fit a 6-7 but a would think an 8-10 would be a push.
