Is it compulsory to use sugar while fermenting? Can we yse plain water instead?

Dear Reader, We learn more about fermenting through our own experiences however I've learned that water kefir can be fermented with other sweeteners such as honey, agave syrup, and maple syrup, but I've tried it with Stevia and it did not work. An excellent reference book you may wish to invest in is Sandor Katz's The Art of Fermentation.
