Q: what is the substance in the Joulies coffee warmer and can I use in reverse where it will collect cold and release the cold

I don't know what the substance is, only that the Joulies, after many attempts, never kept my coffee any warmer than if I'd not used them at all. They were a total waste of money. Supposedly, they take the excess heat out of the coffee and then maintain the coffee warm enough to be enjoyed for a much longer time than if you'd used nothing at all. I found that to be entirely untrue. Using the Joulies I'd purchased directly from the company was a complete waste of $ as they in no way kept my coffee warm longer than if I'd used nothing. They make an interesting paper weight, though. You can buy ten guaranteed-to-work thermoses for the price the Coffee Joulies company charged for the interesting but ineffective trinkets I purchased from them. If it doesn't work to maintain heat, I would imagine it wouldn't work to maintain cold, unless you live in the Arctic where everything is naturally cold. Sorry I can't genuinely be more positive about this product.

Q: how often does the active ingredient inside the "beans" have to be replaced?

Never. The beans are one solid piece of metal. The active ingredient is not accessible, as the beans are welded shut. I still wouldn't recommend these becuause it makes whatever you're drinking taste like metal.

Q: Do they stand behind this product if it doesn't work?

This product was on shark tank. My father loves it as a gift. Works perfect. Most people are too stupid to understand the implications of a genius product. 4 out of 5 sharks made deals so do some actual product testing and research b4 you judge this gem

Q: what size is each one

oval shaped, mine were approximately 2 and 1/8th inches wide by 1 and 1/4" deep at the center by 5/16" high at the center. Pretty to look at but none of mine, nor any combination of them performed as claimed - very disappointing as I love my coffee
