how long would you say this could be kept in the freezer or refrigerator if sealed in a food sealed bag?

Accepted Answer

The rest of the world always recommends that any food will get freezer burn or go bad after 6 months.  But, if you vacuum pack the flour, it will last much longer.  The trick is to get ALL  the oxygen out.  No air , no freezer burn.  Some wheat flours that I have had lasted 2 years in a vacuum sealed bottle on my shelf at room temperature.

How longcan you keep stone ground flour?  How should it be stored?

It all has to do with humidity and temperature. Shelf life is directly connected to how cool and how dry you keep it. Freezers are a very dry environment and are an excellent storage site for long term. A refrigerator is next best especially if you need to use it more often since the act of opening a frozen bag outside the freezer allows a bit of moisture to condense on the flour. Stone ground is no different than any other flour for shelf life but there certainly is a difference between whole grain flour and typical white bakers flour. One of the major purposes behind removing all the nutritious components to make a white flour is to extend shelf life so in essence it boils down to two things. You can have either a flour that stores well at room temperature and has zero nutrition in a white flour or you can buy fresh ground whole grain flour and store it carefully or use it quickly and get a complete suite of nutrition. Like so many other things in life, you can't have it both ways.

What does it taste like as pizza crust or bread?  Is it like whole wheat or ??

I haven't tried einkorn for pizza, but have made bagels and bread. It has a slightly nutty, toaster flavor that regular whole wheat. Being the most ancient and only unmodified wheat, it's health benefits are worth trying it out. Hope you like it!
