Are these thin enough to do cross stitch with

No. If doing cross stitch use embroidery threads. This wool is not thick but thicker than threads so would make cross stitch look bulky.

Can I use this to make rugs?

I guess you could yes, they are small balls I use them for amigurumi, they're only 20 gram balls, hope that helps :)

are these long enough to make granny squares?

Very good quality my mother loves them I’m afraid I don’t know what a granny square is but the wools are very long Hope this helps and they come in a nice bag too
