Sous vide is a cooking technique that uses low and precise temperatures to create amazing dishes - no wonder this technique is practiced by top chefs around the world! Sous vide cooking is easy - All you need to do is place your food ingredients into a resealable bag, make it airtight, then plop it in a rice or slow cooker filled with water preheated by Codlo. Codlo does the rest and you only attend to it once it is done. Addition of fat or oil is optional and clean up is minimal. How does Codlo work? This has been one of the best purchases I have ever made
This has been one of the best purchases I have ever made, PERIOD.After just a couple of attempts, ( a very short learning curve ), you quickly begin to get the hang of the precise temperature and time settings needed to get the exact results you want. The device does a remarkable job holding a consistent temperature, for a set time.Even straight from 'frozen solid' to the dinner table, the taste and internal texture are amazing ... (the directions suggest thawing before hand, but I have been getting the same remarkable results either way ).Seriously, once you get the hang of it, it seems almost difficult NOT to get incredible results.With ANY sous vide, it often helps to give the meat just a light finishing sear, either with a torch, a skillet, or a very brief stay on the grill... 30 seconds per side, or less, at high heat does the trick in a snap.Though it's my first and only device for this purpose, the Codlo set up, in particular, has proven incredibly straightforward and intuitive. ( it almost doesn't even need to come with directions, but of course it does... however they are concise, yet as comprehensive as I've found necessary.I like it so much, I quickly bought a second one for my parents.They love it too.---One more well-deserved accolade for the company.My original shipment arrived damaged, circumstantially and most probably occuring during its trip through customs... (it looked as though the outer box had been opened quickly, the contents inspected haphazardly, and then carelessly left .. padding well out of place, for the remainder of its journey).Consequently, it arrived damaged... banged around and unusable.The Codlo team sprung into action with a responsiveness that was truly refreshing and unexpected by today's standards of customer service.Their level of concern truly out ranked my own.I was amazingly impressed with their responsiveness and sense of urgency.Incredibly (and refreshingly) professional !It's obvious Codlo aspires to get things right, ( and is succeeding in this regard ), universally.If you are in the market for a sous vide set up, ( and shouldn't you be... that is, if you like foods, the tastiness of which, I've found difficult... if not impossible to duplicate otherwise )... i would CERTAINLY recommend Codlo as a first consideration.You will be extremely pleased.I certainly have been.Bon appetite

Sous Vide for the rest of us!
Like several of the other first reviewers I was a kickstarter backer. One watches Chopped and all the other cooking shows and they make you want a sous vide cooker.I did not have the space or hundreds of dollars for something I knew little about and would not be using every day. I stumbled on the KS campaign and immediately backed.The codlo is a black box controller that sits between any rice cooker or crockpot that uses a manual thermostat for cooking. It's computer and temperature probe work together to allow you to heat water to your temp and keep it there for a set time period. I found this approach more more appealing than some others which needed to swirl your water and other such stuff. I felt that using my crock pot with a heat element going around the circumference would be less complex and for my needs just as accurate.The good news is i was right. I have made mostly meats and have tried eggs in a shell and some veggies. You just cook meat to temp and give it a little brown on a hot skillet. Superb! The temps can range a bit but that few degrees does not seem like a major thing given the length of time food cooks and it could also be my slow cooker being less than cooperative. It is something the device allows you to use any slow cooker or rice cooker with it.I have an extremely handy hub so he drilled a hole in the plastic cover for the probe to fit through. Small enough it does not impact regular slow cooking and large enough to allow the probe when i sous vide.The cookbook may just be e bet part. It is filled with gorgeous photos, handy charts, instructions and fabulous recipes. A great guide for those of us just starting with this techniqueMy next goal is to give lamb a try. I have always shied away but the slow and low of sous vide seems perfect for the protein.I do use vacuum sealing with a pump device called thrifty vac I found on kickstarter. That is really great. I have also thrown in herbs like rosemary and they flavor permeates what you cook.

Learn a new way to make tasty meals with Codlo
I picked up my Codlo from the Kickstarter project, and I've truly enjoyed learning about sous vide with it. For me it was about learning new ways to cook that are interesting, but I don't have a lot of space in my kitchen for lots of "stuff." So the Codlo allowed me to reuse my existing Crock Pot and start to learn a new style of preparing food. Not an expert yet, but working on it! The controls on the Codlo are easy to use and very intuitive. There's not a lot to say because it "just works."For those getting started I'd recommend trying some simple stuff first, make eggs and other simple recipes. Then grow from there. I like the Codlo cookbook as it has pages for each type of meat on how to cook various pieces of meat. I use the actual recipes for inspiration but have converted a lot of my family's favorite recipes over to sous vide style. Which I've been delighted with.If you're tired of making crock pot meals that come out tasting like mush, you probably want to start learning sous vide, and Codlo is a great way to get started.

Codlo is so easy, and the food you'll make is going to be cooked so perfectly that you'll want to use it every day. You'll never over or under cook that steak again. Your pork chops and chicken breasts will be juicier than you've ever known. Gone are the days of guessing if your meat is cooked to your desired doneness. You won't be standing next to the hot grill trying to time the exact second to flip your food. All of that fussing is over.So I highly recommend getting one. Your family will rave. Your guests will be impressed. You'll love the food you make with it.
