My toddler loves cleaning. Could one section of the handle be left out to shorten the mop?

I do not believe the handle will assembly correctly if you leave the middle section out.

How does the wringer work? Is it manual? Do I have to touch the strip mop to wring it

You do not have to touch it. Please go to www.householdessential.com and type in 56792-1 in search bar and you can view a video on the product.

Where to buy the replacement mop no bucket?

Unfortunately, this is imported as a set and we do not sell the components separately.

Where can I purchase mop heads?

I had mop heads from the brand that was sold "As Seen on TV" that fit this mop. I think they may be standard for all.
