Q: Is this knife real misonoux10?

I have purchased 2 of these, both legit and real. No knock off, no bs ... Just real Misono!

Q: New to this. Are these the 150 - 130 - 120 mm sizes? Is this blade length vs total length? Help! :-)

no just the length of the blade. 120 mm about 4.72 . I do a lot with knifes. 95% of what your to do is going to be with the 6 inch or 130 mm Or the 150mm to 180mm which would be about 8 inches.. This is especially good to know if you are going to be in the very high end knives. There are a lot of dynamics to buying knives. Your experience your price point overall. You can some times buy a cheaper set for what you would spend on one very good knife. The Misono is upper end outstanding I have a set 6'' 8'' 9'-' 8'' If you already don't know train yourself to sharpen the knives go to you tube. Japanese knife should be sharpened at a 15 degree angle. Sorry for running on Thanks

Yes, the knife comes with an extremely sharp factory edge and you can use it as is.

Q: What angle should this knife be sharpened?

The knives are fantastic. Hold an edge really well. If used properly and honed regularly they should not need to be sharpened for a long time. Be cautious if you need to actually sharpen them as Misono knives original sharpening angle is 70/30...which is definitely best left to a professional. If you sharpen yourself i guess convert to a standard 15º bevel, but i wouldn’t personally want to ruin the perfection misono achieved with their two stage edge which has the sharpness of a single edge Japanese knife.
