Why does black salt smell and taste like eggs?

Kala namak is naturally rich in sulphur compounds, and those give it a savoury, gently egg-like aroma. It is exactly why cooks stir a pinch into tofu scramble, vegan omelettes and egg-free salads.

Is this the same thing as Himalayan pink salt?

No. Both begin as Himalayan rock salt, but kala namak is prepared differently and tastes savoury and sulphurous rather than simply salty. Pink salt will not give you that egg-like note.

My jar has clumped a little. Is anything wrong?

Not at all. We leave out anti-caking and free-flow agents, so black salt clumps naturally in humid air. Break it up with a dry spoon and use it as normal. Clumping is a sign of a clean label.

How much black salt should I use?

Start with a small pinch. Kala namak is more aromatic and more assertive than table salt, so add a little, taste, then build up. For a single-serving tofu scramble, an eighth of a teaspoon is plenty.

Is it vegan, kosher and gluten friendly?

Yes. Rani Black Salt is one ingredient, an unrefined natural mineral salt with no additives or fillers. It is vegan, kosher, non-GMO and gluten friendly, and it is sourced and packed in India.
