Q: Will this hold 20 cups of flour?

It should. 5 pounds of flour is approximately 18 cups. Wife puts in a 5 pound bag (I think) in it. Reason for me wondering it manufacturers are shrinking the size of everything so what looks like a 5 pound bag might not be. I never checked that.

Q: Can leftover food be kept in them in the refrigerator?

I have kept food in them and saved it for a couple of days in the refrigerator with no problem
