This is an excellent chef knife
So I've spent hundreds of dollars on very expensive chef knives for my kitchens. I like to cook and enjoy using high quality tools. I've tried Bob Kramer knives, Damascus steel knives and other expensive ones; this $20 knife surpasses them all!!! Why you say? The knife is thin kerf blade making it easy and light to use, it stays sharp and very versatile. I noticed that other expensive knives have thick blades making them heavy and, most of all, too thick to easily pass through an onion for example. I put all of my other knives away (sold a couple of EBay) and now I mostly use this one. Thinking of purchasing the 8" model for general purpose as well. Furthermore, though I take care of this knife, I don't panic when others use/abuse it because I can always get another one for $20!!

Decent Mercer 10" Chef's Knife
I've had the knife 3 weeks. I use it at work. I am a breakfast chef. I wanted a decent chefs knife with a grip that's softer than the chef knives at work. I wanted one relatively inexpensive. I chop a lot of stuff at work and have this callous on my finger from so much knife work. That said, I put it to the test. It was shipped quickly. It was super sharp and made of quality steel. The grip is not really soft allowing precise control. It has maintained a great edge. I hit it on the sharpening steel every day and that makes it as sharp again as when you got it new. I know there is better but I did not want top of the line. The Mercer 10" Chef's Knife is truly where quality meets value. 5 stars for being what I wanted and needed within budget. Dry it out with a towel before you wash it! High carbon steel and razor sharp!
I've been reading comments about how this knife rusts so easy after 3-4 use. You have to remember, this is a HIGH carbon steel. It is prune to rusting if you don't wipe off the water off with a towel. Sure it says "No Stain", but that's true if you leave it expose to water or high acidic foods for 4-5 hours. It should be re-labeled as "stain resistant". This knife teaches you how to take care of your future expensive knifes properly in the future. Invest one of those Sarutobi rust erasers, if you planning on leaving your knife exposed to the elements. With that being said, this is a best out of the box knife ever. The high carbon steel leaves the cutting edge to last longer w/o needing to resharpen. The handle feels nice and I feel safe holding it w/o it slipping out of my hand.

Best Knife and Bang for buck
this knife is nice and big. the handle is rounded and there's no sharp edges on the spine of the knife and is comfortable in pinch grip. out of the box is razor sharp and so far I've used it like a month and still slices things like butter. 5/5 would buy again

I love this knife
I love this knife, I work in a restaurant and bring my own knifes and let me tell you, not only is this knife sharp but the grip is very comfortable to use (I should know because I use it for 10 hours a day) but it's also very light weight compared to other knifes of the same size this is the lightest knife I own and I love it!

Don't underestimate the size
I haven't taken this knife out of the plastic yet; it looks good and the handle feels good in my hand, but it's HUGE. I must have assumed 10" included the handle—nope, it's the blade. I could probably cut a cake in half with one stroke with this thing. I would not recommend it as a first chef's knife, which was my original plan; it's kind of intimidating-looking. I should have gotten the 8" version! Amazon gave me a refund and let me keep the knife (I guess they don't want large blades sent to them in the mail, which is understandable). I haven't decided yet if I'll keep it or (since it's still in the packaging and thus not going to cut anyone) give the local thrift store a nice prize.
