Does it shoot to a preset direction or it will rotate to the direction where the motion was detected?

It adjust the same as a rain bird. You can have it rotate in a 360 circle by lifting up the stop spring. Or in a specific area by lowering it between the two stops brackets but it will not know where the offender is and shoot a jet at that spot. Lord knows I wish.

The water birds lounge on our pool deck in front of the sensor and it only shoots at people. How do set it to spray the birds?.

There is an adjustment that the manual says determines the distance but at the same time it adjusts the spray.

can I have the jet shoots for more than 5 seconds ?

No. There’s no setting to make it shoot longer.

I need to put on roof. Can it be installed for roof?

If you can find a way to mount it... But I'd be worried about water damage to the roof. Make sure it's spraying down the roof and not up for sure
