Would Hot Wheels fit on this?

No, this toy is FAR too small, way smaller than the ad makes it look. It's about a quarter of the size of the boy in the picture, the cars are about half the size of a Hot Wheels car (if that) and the plastic for all of it is very cheap and fragile. Our little guy broke it the day he got it, it's so flimsy. Avoid this garbage toy at all costs, I wish I had.

Can I buy additional cars for this?

Not really the track is too small for cars

Do we need to assemble it? Is it easy?

Yes it’s self assembly. It’s easy to assemble. HOWEVER the pieces come apart very easily. It is not a sturdy structure.

Is this toy suitable for a 2-year-old toddler? The package shows it is for over 3 years old.

My 1 year old loves it. There are small pieces so I’m assuming that’s why it says 3 and up.
