Not for a full brisket
Does not hold an edge. Had to initially take the factory bevel off, and take it to 5000 grit on Shapton. Got it razor sharp. But it performs poorly on brisket. Lost edge about 25% of the way through and became somewhat hazardous to use. Still got the job done, but poorly and I was having to be very careful as I worked. Not as flexible either so it performed poorly on the top layers of fat. I will keep it as a cheapo knife, and try out the Victorionox brand for a little more.

Another Great Knife From Mercer
I was turned on to Mercer knives years ago from a teacher who taught cooking classes. I asked what was a good knife that wouldn't break the bank and she said, for all her new students she refers them to the Mercer knives. I bought my first one for around $22 and it's been going for years now and holds a great edge. I have much more expensive knives now and the Mercer still gets used just as much. This one is no different. Super sharp right out of the packaging and a great feel. If you are looking for a great low cost chef knives, i highly recommend the Mercer line. You wont be disappointed

Great addition to our cutlery set.
This knife is well proportioned and well balanced. It make vegetable prep quick and easy. It handles every bit like I hoped that it would!I wasn't sure I would like the Granton edge, but it surely does release slices more easily than a knife without that feature.This knife holds the sharpest edge of any knife we've ever owned. Furthermore, it was that sharp when I took it out of the box.The handle will not absorb water and there are no cracks or crevices between it and the blade where food can lodge.Having a color-coded handle is a plus, too.I was a bit concerned that I might regret not having ordered the Mercer Culinary Genesis Forged Santoku Knife, 7 Inch. But I must say, this is one fine knife! I doubt I'll ever regret my choice.

Surprised this isn’t triple the price
This is the third chefs knife I’ve owned, but I’ve used plenty as a cook in restaurants. This one is truly great for the price. The handle is so nice to hold, and the blade is razor sharp! Like be super careful sharp. I have been using this knife multiple times a day chopping meat and veggies for 4 months now and I still haven’t sharpened it once...like that’s crazy right? It’s still super sharp, not quite like new but does the job still! I will buy Mercer brand again for sure.

Great Value
I won't claim to be a knife expert.... but for the price of the knife it performs perfectly when cutting meat, trimming roasts, brisket, etc. So far it's maintained it's edge, although not using it daily. Just as sharp out of the box as a knife 5X+ the cost. Would buy again simply because it's a great value - heck, buy 5 of them and I'll have a sharp, useful knife for years to come.Only con I have: does not come with a case/sheath.

Great knife at an incredible price.
I am not a cook or a chef or even an avid home cook. I just like nice, quality items that will last and this knife is awesome. It's sharp, feels great in my hand, and helps me meal prep my chicken quicker than ever before. I recommend this knife to anyone who is looking for a quality knife that will last!

Lightweight but Performs Great
Easy to use, very sharp, and cleans up easy in the dishwasher with no stains or rust after several months. The handle is easy to hold and the knife is very light weight which makes it easy to adjust your cuts. It feels "nimble" when wielding. About the only improvement I would like is a slightly heavier handle to tone some of the nimbleness down and give it slightly better balance. Overall though, an excellent knife that I'm enjoying in the kitchen.

Great for arthritic hands!
This large knife has held up excellently for me. It’s easy for me to hold and use with my arthritic hands. It’s sharp and has maintained its blade well. I highly recommend it if you have arthritis.

Fab knife
Absolutely fab knife peeled the spuds fantastically available in dif sizes but just bought the small one the knifes that good I’ve ordered another two for my property abroard
