About the Brand Bob Moore's secret to life may just be "work hard and keep it simple." Living this philosophy, Bob literally puts his nose to the grindstone every day. Bob's Red Mill Natural Foods is an Oregon-based company that utilizes simple, old-world technology to mill hundreds of all-natural whole grain products. Bob's Red Mill is dedicated to the manufacturing of natural foods in the natural way. In their own words: "With all the sophisticated knowledge of recent times, no machinery has yet been developed that grinds grains into flour quite as well as our flint-hard quartz millstones quarried in France and used by discriminating millers since early Roman times." "Our well-dressed (sharpened) sets of millstones turn the highest quality wheat into a finer, better baking bread flour than all the hammer mills, steel roller mills, steel buhr mills, or pulverizers ever built! These slow turning millstones grind the bran, endosperm, and germ (containing its nutritious wheat germ oil) into flour in a cool natural way, creating a more assimilable food." Bob's Red Mill stone grinds all common and most uncommon grains into flours and meals on its over 100-year-old mills. They mix them into an astounding array of unique cereals, pancake and waffle mixes, machine and hand-made bread mixes, quick bread mixes, gluten-free mixes, and specialty grain products.

A great organic flour (that happens to make great dog treats!)
Love that I can get organic quinoa flour here on Amazon for much less than I get it in the health food stores. When my oldest pup got cancer last year, we switched all three pups over to eating organic - which we make for them here at home. The quinoa gives them a very healthy carbohydrate. I also use it to make doggie treats -- 4 organic eggs, one can organic pumpkin, *almost* one bag of this organic quinoa, 1/2 tsp sea salt and two tsp organic parsley. Mix the eggs & pumpkin, add the seasonings, then add in the flour (we do it all in the Kitchen Aid). Then roll the dough out 1/4" thick and use the last 1/8 - 1/4 cup of the flour to prevent sticking. I use a small cookie cutter and get over 150 healthy treats for the pups -- and they are the pups' FAVORITE treat. They absolutely love 'em.Almost forgot - bake the treats @ 350 for 20 mins, then flip 'em and bake 'em 10 mins more.Of course, we don't just reserve this quinoa for the pups' treats. We use it for DELICIOUS pancakes for ourselves, too. :-)Overall, this is a great organic flour.

Great for GF brownies
The strong flavor of quinoa flour makes it more difficult to handle in tortillas or sweet breads, but it goes perfectly with the stronger flavor of cocoa. I use this flour, sometimes along with a little peanut powder or espresso powder, to make wonderful gluten-free, dairy-free brownies. Here's the recipe I use, adapted from the "Mmm-Mmm Better Brownies" recipe on Allrecipes.com. I'm giving the measurements for a double batch, which makes a rectangular casserole pan of brownies. If you have GF/DF people in your life who miss brownies, they'll eat them quickly!Quinoa Brownies (gluten free, dairy free)1 cup quinoa flour1 cup melted coconut oil (or grapeseed or canola)1.5-2 cups granulated unbleached sugar (organic cane sugar, or maple sugar, or coconut or date sugar all work. Just not turbinado)2/3 cup unsweetened cocoa powder1/2 teaspoon aluminum-free baking powder (I use Rumford brand)1 teaspoon sea salt (or 1/2 teaspoon regular salt)2 teaspoons vanilla extract4 brown eggs (This is a forgiving recipe, but it relies on these eggs. You can't leave them out!)1 teaspoon espresso powder (optional)2 tablespoons powdered peanut butter (optional)1 teaspoon almond extract (optional)3/4-1 cup Enjoy Life soy/gluten/dairy/nut- free chocolate chipsPreheat oven to 350 degrees F. Grease a 9"x13" pan with coconut oil. In a large bowl, add all ingredients except the chocolate chips and mix until just incorporated. Add the chocolate chips and stir a few more times. Transfer to pan and smooth out with spoon or rubber spatula. Bake for 20-25 minutes. It may take a bit longer, depending on your oven and ingredients. When they are done, they will start to pull away from the edges slightly. These taste really good and are a big hit at church potlucks, where people with allergies often have to skip the dessert area. I make them without the almond or peanut ingredients for potlucks. I don't recommend adding nuts, as the quinoa texture might be weird alongside walnuts. The textures of brownie and chocolate chips/chunks compliment each other well, though.

Lighten up with this flour.
If you can't or don't want to eat wheat flour, try this. If you like a delicate, nut-like flavor, try this. Quinoa isn't really a grain at all...kind of like Buckwheat isn't (no, Quinoa isn't like Buckwheat). I've made cakes with this, bread with this, and pancakes with this. To be sure, you'll have to vary your techniques a bit and there's no cookbook to tell you how. Sometimes I use this in combination with almond flour. I'd rate it a FIVE, but it isn't perfect...like most things. If you can't eat wheat, this is nearly perfect. If you simply like a different taste, this is nearly perfect. It isn't just for those that can't eat wheat. The CARB COUNT goes down a good bit with this flour. I eat it because I like it...ON PURPOSE!

Great Flavor! Good for You! Very versatile!
I love the health benefits of Quinoa. As a vegetarian, I don't get very many complete sources of protein with easy access. Quinoa delivers that. But I keep forgetting to cook quinoa instead of rice with meals. This is where quinoa flour comes in handy. I make a lot of breads - Indian flatbreads among them. I add quinoa to any bread recipe - substitute up to a quarter of the gluten flour, whether it's wheat or something else, with quinoa and you will not be able to tell the difference in taste or texture. It comes out looking a little whiter than if you were to use whole grain wheat for example. The taste is excellent. I have also used this as a base for when I am cooking roux or creamy soups. Turns out great! We got the subscription from Amazon Prime so we wouldn't have to remember to order it - it shows up exactly when we are ready for more.

Excellent buy for quality and quantity
Organic quinoa flour is gluten-free and fits in perfectly with a plant-based diet. It is also a versatile flour that can be used alone or mixed with other types of gluten-free flours to take advantage of each one's special properties. Cooking can be a challenge when one must limit certain food ingredients, and I experiment to find the best ways to use these specialty flours. I'm thrilled so far with everything I've used Bob's Red Mill organic quinoa flour to cook. I even used it to make a roux for a vegetable gumbo, and the result was perfection!Buying the four-package deal through Subscribe & Save is so thrifty. Just one of these bags cost nearly $14 at the grocery store, so I save a lot of money buying through Amazon S&S. I place the other packages in large zipper bags and store one in the frig and the other two in the freezer until needed to keep them fresh and weevil-free. I cannot say enough good things about Amazon's Subscribe & Save program. It saves me so much money on items I use regularly.

Reasonable substitute for wheat, rice, and potato starch flour
If you've been dx'd as allergic to wheat, rice, and potato (like me) then this makes a good flour substitute.
