Does this shake/vibrate with movement of the car or hitting potholes?

It does not move around - I have had this product since April and I live in a state where there are tons of potholes (I will leave it to you to guess) and I have never noticed this mirror moving at all. It is really big and baby LOOOOVES to see himself and he talks and screams at the mirror, its great.

Can this be used to see two carseats at once?

I suppose you could, but you wouldn't be able to see a full view of two kids. Best used for one child/car seat.
